Countryside walk and wild herb workshop

Guided walk for identifying wild herbs, with a hands-on workshop focused on harvesting, processing, and culinary use of wild plants.
Over the two days, participants will learn how to identify wild herbs for culinary and herbal use, harvest them properly, and transform them into traditional food preparations and preserves.
The workshop includes activities such as harvesting, cleaning, and preserving wild herbs, preparing mixed wild salads (“misticanza”), and demonstrations on how to transform wild plants into preparations such as herbal vinegars (acetolites), wine-based extracts (enolites), fermented beverages, pestos, oil preserves, dry salting methods, and syrups.
The program also includes a convivial moment with a lunch based on wild herbs.
The activity takes place at the Giardino della Flora Appenninica in Capracotta (IS) and is led by Arianna Salvi.
